Dinner Ideas: Mexican Cod Tacos + Spicy Tomato Guacamole (gluten free)

My cravings like to come in intervals. One week I have this sudden urge to eat Japanese food. The next week Indian. After that, Thai. Then it’s vegan brunch. Then it’s anything covered in chocolate and peanut butter. This time, it was Mexican food, and it took me three days worth of reminding my mother casually or not-so-casually about how I longed for making corn tortilla tacos for her to finally make some Mexican dinner! Hooray!

Lately, we’ve been eating a lot of cod, too. It’s actually replaced tilapia’s position in our household because it’s been difficult to find wild caught tilapia moreso than cod. Plus, everyone (except my vegetarian sister) really enjoys it! I love the flakiness of it and its versatility. The health benefits of cod are astounding as well. You’d be surprised as to how yummy they taste in a taco, which generally has tilapia, shrimp or mahi mahi! However, you can use any type of fish you want, and don’t limit it to just seafood too. By all means, if you don’t eat meat, break out the tofu, the black beans, and if you do, you can have steak, chicken, carnitas or more!

RECIPE (tacos)

  • 1 cod fillet, cooked; can also be any fish such as tilapia, shrimp, salmon, etc.
  • 2 mini corn tortillas or 1 normal sized corn tortilla
  • Opt: black beans, spinach, purple cabbage, onions, salsa, etc.

RECIPE (guacamole; serving sizes vary)

  • 1 ripe avocado
  • 1/4 cup chopped onion
  • 1/4 cup chopped tomatoes
  • Salt and pepper to taste
  • 1 tsp Sriracha (opt.)
  • Opt: salsa, mango, etc.

PROCEDURE

  1. Set the oven to broil and marinate your cod in anything you’d like (I used olive oil, salt and pepper).
  2. When the oven is ready, line a baking tray with sprayed aluminum foil and broil the fish for 25-30 minutes, or until completely cooked.
  3. While the cod broils, make your guacamole by either hand-mashing the ingredients or blending them in a small processor.
  4. Heat a pan on low temperature and warm your corn tortillas.
  5. While your tortillas are warming, break the cod apart with a fork.
  6. Assemble your guac, fish and tortillas and enjoy!

  1. I must admit, I am always craving Mexican! I made tacos with spiced up roasted cauiflowers and cilantro coleslaw, which sounds weird but it was seriously so good! I think I am constantly craving guacamole, it is just the best thing ever! These definitely look delicious!!
