Carrot Cake Peanut Butter Flax Pudding

Easter is in just a day and we are almost halfway into our spring season! If there is any time that is suitable for a carrot cake rendition of a breakfast, it is ANY time of the year. But in all seriousness, spring is the most wonderful season to break out all the fruity and carrot cake oriented recipes. If there’s anyone who’s going to convert everything into a carrot cake, it would be me. I did just so with my classic peanut butter flax pudding! I have been consuming this peanut butter flax pudding for the past week, so you can just eliminate the carrot cake inclusions if you fancy.

You do not have to use peanut butter powder–you can use any protein powder of your choice! Below is another alternative that is protein powder free and is more focused on healthy fats, but is still decently high in protein for a vegan breakfast! Top with fruit, nuts and seeds, and/or granola, and dig in!

RECIPE

  • 2 TBSP ground flaxseed meal or chia meal
  • 6 TBSP ground peanut butter powder
  • 1/4 cup carrots, grated and shredded
  • 1/4 tsp cinnamon
  • 1/2-2/3 cup unsweetened dairy free milk
  • 2-3 tsp Stevia or monkfruit
  • 1/2 tsp vanilla extract
  • 1/4 tsp sea salt
  • 2-3 TBSP walnuts, chopped or lightly broken apart (optional)
  • 2 TBSP raisins (optional)
  • Toppings to garnish, including walnuts, raising, berries, granola, pumpkin seeds, coconut flakes, dark chocolate, peanuts, almond butter, etc.

RECIPE (protein powder free)

  • 4 TBSP ground flaxseed meal or chia meal
  • 1/4 cup carrots, grated and shredded
  • 1/4 tsp cinnamon
  • 2/3-1 cup unsweetened dairy free milk
  • 2-3 tsp Stevia or monkfruit
  • 1/2 tsp vanilla extract
  • 1/4 tsp sea salt
  • 2-3 TBSP walnuts, chopped or lightly broken apart (optional)
  • 2 TBSP raisins (optional)
  • Toppings to garnish, including walnuts, raising, berries, granola, pumpkin seeds, coconut flakes, dark chocolate, peanuts, almond butter, etc.

PROCEDURE

  1. Whisk all ingredients in a bowl until the texture and consistency are completely uniform.
  2. Let sit in the fridge for 20 minutes minimum.
