Mixed Berry Baked Oatmeal Recipe (vegan + gluten free)

Do I miss home-cooked food already? Very much so.

For one thing, I truly miss being able to cook my food very freely without making such a ruckus in the kitchen. I have a sneaky feeling that my suite-mates last year secretly despised me because I would broil Brussels sprouts, broccoli, and mushrooms until the stench would fester outside of the kitchen. Now that my terrible sense of smell has strengthened slightly, I can relate.

Luckily, there is a way for you to bake without your suite-mates or roommates hating you. Add something sweet, cinnamon, fruit, and voila. They will love you for eternity. Oh, and you’ll probably attract your neighbors. And the boys to your yard. If you even have one.

I remember my youngest sister and I totally winging a recipe that almost set the kitchen on fire (GAH!), plus having the recipe wow our tastebuds! The warmed blueberries and peach add the perfect juiciness in the creamy and cake-like oats, which are lightly dusted with good ol’ brown sugar. Oh, and did I forget to mention crispy oat toppings and cold almond milk? Fabulous.

I’ll admit that my sister thought it needed more sugar, but personally, it was the perfect sweetness for me. You will have to experiment for yourself since everyone’s tastebuds palette is different. I served my oatmeal with strawberries, white peaches, monkfruit maple syrup, and peanut butter protein powder. Obviously, you can serve your oatmeal with anything you’d like. I wouldn’t recommend Sriracha, though.

RECIPE

  • 2 cups of gluten free rolled oats + 2 TBSP to garnish
  • 1/4 cup brown sugar + 1 tsp to garnish
  • 1 tsp cinnamon
  • Pinch of salt
  • 1 large white peach, approximately 3/4-1 cup, chopped
  • 1 cup of fruit of choice; we used an antioxidant mixed berry blend
  • 2 tsp vanilla extract
  • 2 cups of non-dairy milk of choice; we used organic almond milk
  • 1 TBSP coconut oil (optional)
  • Coconut oil or nonstick spray for baking

PROCEDURE

  1. Preheat the oven to 350F.
  2. Bring a pot on a stovetop and fill with the dry ingredients.
  3. Mix in a chopped peach and fruit of choice.
  4. Stir in the wet ingredients very carefully.
  5. Carefully set the stovetop on medium-high heat and continue mixing until the oats absorb most, but NOT ALL, of the liquid.
  6. Spray an eight-by-three-inch baking tin with coconut oil.
  7. Pour in the oats.
  8. Sprinkle with brown sugar, raw oats, and some other optional ingredients if desired.
  9. Bake for 25-30 minutes.
  10. Serve with almond milk and enjoy!

  1. Honestly, wish I could eat oatmeal because I HAVE SO MANY IDEAS with how to jazz it up – LIKE BAKING IT just like you have!

  2. Oatmeal is something I could potentially eat for every meal for the rest of my life because it’s so versatile and delicious! Need to try out this recipe. And I can say that my family members definitely prefer it when I add something sweet to my baking haha, recipes like this are definitely a win win situation 🙂
