Blueberry Acai and Kale Smoothie Bowl

Am I ready for the end of summer? Yes and no. I’m ready to get back into the swing of things–aka, establishing a real daily routine, getting fit, making money from a job, meeting up with my friends, and being active in clubs and everything! I’m definitely NOT looking forward to mental breakdowns from workload stress. I can be an emotional wreck sometimes. Ugh.

But food-wise, I still love my smoothies–besides, it’s been so hot here in Los Angeles! Seriously, I’m sweating as I write this, and it was a rest day today! This recipe I’ll be presenting to you was inspired by a time when my mother and I visited a small smoothie bar at the first floor of our local Equinox. There, we enjoyed the most simple, pure, and yet gloriously delicious blueberry and acai smoothie! The only ingredients included were blueberries, acai, and almond milk! That’s it–and the smoothie tasted like vanilla ice cream. No bananas, vanilla extract, or maple syrup required.

No joke about this, but ever since we had that smoothie, the two of us have been replicating the recipe daily! We’ve gotten ever single family member hooked on this recipe, which says a LOT! This smoothie bowl is incredibly creamy, refreshing, sweet, and unbelievably comparable to dessert.

Given that we’ve begun making smoothies on the daily, we also decided to invest in a new blender that’s more powerful and less audibly disturbing. Hence, we finally bought a Vitamix! Let me tell you guys that it’s totally worth the hype! The blender remains intact even on high power, and the blending stick helps immensely with incorporating every curly leaf of kale and particle of food you place in the blender absolutely perfectly.  If you wore a blindfold while drinking this smoothie, you would have no idea that there’s kale.

Keep in mind that kale tends to be very bitter, thick, and tough to chew, so either make sure that you have a really strong blender, massage the leaves a bit, or cut the kale in smaller pieces without the stem. If you really hate the taste of kale, spinach is another wonderful option. Greens like arugula and Romaine will give an even more acquired taste. Collard greens also work well in smoothies, but I have never vouched for this particular recipe.

HACK! Freeze your bowl before adding in the smoothie, and assemble the toppings before or during the blending process. You don’t want a runny smoothie bowl, now do you?

RECIPE (serves 1-2)

  • 3 cups of frozen organic blueberries
  • 2 large handfuls of fresh and organic kale (around 2 ounces worth of kale)
  • 1 packet of pure acai; I used this Sambazon superfruit pack
  • 3/4 cup unsweetened almond milk–more or less depending on your preference of thickness
  • 1 tsp maca powder (opt., but adds a TON of antioxidants!)
  • Optional: strawberries, cherries, cinnamon, banana, vanilla bean, cocoa powder, protein powder, dairy free yogurt, goji berries, cacao nibs, granola, nutrition bars, etc.

PROCEDURE

  1. Blend all ingredients until a thick, creamy, and luscious mixture is attained.
  2. Serve with toppings and enjoy!
