Dorm-Friendly Breakfast Sweet Potatoes

Before I get into the post, I just want to thank everybody who took the time to read my last post and also leave a supportive and compassionate comment from the bottom of my heart. I may have said this multiple times on other posts, but it’s so difficult to be vulnerable on such a public platform where you are constantly judged in ways that you wouldn’t even fathom. Putting yourself out there is a scary thing, and I would have never imagined doing it myself.

Look, I know that you guys are probably wayyyyyyy over my love for sweet potatoes. In fact, it gives you a similar feeling when one of your friends starts seeing a new person, and they just cannot stop raving and raving about that person when you hang out. Your friend talks about how gorgeous this person is, how fun this person is, how comfortable this person makes them feel, and you are just sitting there, listening to everything and seething in annoyance. My love for sweet potatoes may probably even feel worse.

But anyways, I swear that finding a Halloween costume is way more stressful than it looks. Nowadays a lot of us are just resorting to a cute outfit or leotard with animal ears, drawing “BOOK” on our faces or writing “CRAYON” and “BUTTERFLY” on a plain T-shirt. I don’t want to be one of those lazy people because I’m just naturally a very creative and elaborate person. I want my costume to look like a piece of artwork, almost. After scrambling for weeks for ideas, I have decided that I’m going to be Persephone since I have a decent dress and a knack for picking the flowers outside of my apartment. Hey, gotta be spontaneous.

You want to know what’s also a piece of artwork in my opinion? My breakfast sweet potatoes! It’s no surprise that I spend twenty minutes in the kitchen concocting my sweet potato dishes by strategically garnishing everything so that the toppings are lined up perfectly. Then I spend an extra five-six minutes or so taking photos/footage for future videos! Luckily, I ALWAYS make sure my sweet potatoes are piping hot right before I get some snapshots–which means that the left palm of my hand is usually burning in agony. RECIPE

  • Sweet potatoes of choice; quantity will vary depending on how hungry you are!
  • Spices of choice; I use cinnamon, turmeric and maca powder
  • Cereal of choice; I use Nature’s Path Peanut Butter Panda Puffs, Trader Joe’s Pumpkin Spice O’s, Cascadian Farms Organic Graham Crunch cereal or Weetabix
  • Muesli of choice; I use Evoke Foods
  • Granola of choice; I use Hapyy Granola or Trader Joe’s Country Pumpkin Spice Granola
  • Spread of choice; I use organic peanut butter, crunchy almond butter and protein frosting
  • Fruit preserves or mashed berries (opt.)
  • Sweetener of choice; I use Lakanto’s Monk Fruit Sweetened Maple Syrup (opt.)
  • Optional toppings: fruit, chia seeds, superfood crumbles, kettle corn or even some of your favorite treats if you want to splurge!

PROCEDURE

  1. Cook your sweet potatoes any way you desire (this is my absolute favorite way!).
  2. When your sweet potatoes are finished, slice each of them in half.
  3. Sprinkle your spices on each side of the sweet potato, rubbing them on if necessary.
  4. Add your spreads and fruit preserves onto the sweet potatoes.
  5. Repeat step 4 with your cereals, muesli, granola, optional toppings and lastly your sweetener.
