Sweet Potato Sammies

Ever had only a few seconds to come up with a recipe?

I decided to call these sammies instead of sandwiches because it’s cute and I’m too lazy to say sweet potato sandwiches. Not really, but still. Anyways, I came up with this recipe within literally seconds after finishing a TVP bowl when I only had ten minutes to make breakfast, eat it and hop in the car to my uncle’s and aunt’s pharmacy for an internship. Upon going to the fridge after cooking my sweet potato, I was a bit underwhelmed by the lack of ingredients I could use to make a bomb or cake. So it was literally just one side slathered with peanut butter and the other side with jelly, closed them together and ate it. I seriously underestimated it and I’ve been hooked ever since.

As good as they taste, I struggled so much to find an aesthetically pleasing recipe. Just look at those falling blueberries. How unprofessional of me. 😦

Here is the original PB&J combo in a Japanese yam, which remains my absolute favorite combo to this day! (prepare for extremely ugly pictures!) You’ll notice the kitchen counter is different from my usual black spotty one. BTW, if you don’t already follow me on Snapchat which is just superfitbabe, do it! Also, that’s peanut butter on my thumb, not peeled skin.

WARNING: If you add in many toppings that aren’t spreads, these are literally the hardest things to eat. I had to eat them open-faced because I couldn’t open my mouth wide enough to take a proper bite! Regardless, they are absolutely delicious and irresistible. The best part is that there really is no right or wrong way to combine them! Okay, that’s a lie, but don’t blame me because I didn’t set anything up–it’s up to you to create your own combinations!

RECIPE

  • 1 large sweet potato; use more if making additional servings
  • Spread of choice; sweet: vegan chocolate protein frosting and honey roasted peanut butter (in image); savory: Sriracha and Heidi Ho! spicy chia cheese (in image)
  • Other add-ins: kale, lettuce, chicken, tempeh, tofu strips, bacon, fruit, coconut shreds, etc.

PROCEDURE

  1. Cook your sweet potato in any way desired. If in a rush, microwave for 8-10 minutes (4-5 min on each side); if you have more time, boil your sweet potatoes and heat when ready or bake for 45-60 minutes.
  2. Slice your sweet potato in half. You can opt to peel the skin as well or keep it on.
  3. Spread one side with desired sauce. If you use more than one, spread the second sauce on the other half.
  4. Add the additional ingredients on one half only. Go crazy!
  5. Place the half with no ingredients on top of the other. You may have to use a toothpick to keep them together.
  6. Enjoy while it lasts! Which won’t be very long.

      1. When do I NOT want sweet potato?

        … maybe now because I just had a big plate of cinnamon-roasted sweet potatoes. But other than that, I ALWAYS want some squash!
