Elli Quark Coconut Flour Crepes + Australia’s Health Victory!

It’s been a long time since I went to Paris. Over five years ago, I visited over ten French breakfast eateries and had crepes pretty much every time with the usual: strawberries, nutella, bananas and whipped cream. I loved them so dearly, and I really wanted to recreate those memories. ‘Cept I was in a bit of a fruit crisis. Literally ONE small strawberry left, a batch of unripe bananas, mandarins (which would not go well with crepes and are fruits I don’t really like to begin with), and a bruised, mushy apple were all that I had. My next option was leftover peanut butter nana ice cream from the freezer. Keeping my fingers crossed, I scooped out a portion for both crepes and didn’t regret it at all! The heat from the batter and the iciness from the nana ice cream were absolutely perfect. No worries here!

Anyways, a secret but not-so-secret ingredient I used was some Elli Quark to make the crepes fluffier! I was a bit worried by the liquidy batter but the results couldn’t have been better. For Paleos and vegans, use coconut or any other dairy-free yogurt. You can also substitute the yogurt for cottage cheese, but blend the mixture to get rid of the chunks and add extra sweetener.

RECIPE

  • 1/4 cup egg whites
  • 3 TBSP plain Elli Quark, or yogurt of choice (Greek, vanilla, coconut, etc.)
  • 1 tsp vanilla extract
  • 2 TBSP coconut flour
  • 1/4 tsp baking powder
  • Stevia to sweeten, or any other sweetener or choice
  • Opt: peanut flour, cinnamon, slash of cashew/almond milk, cacao powder, etc.

PROCEDURE

  1. Heat a nonstick pan on low-medium heat.
  2. Mix all wet ingredients in a bowl.
  3. Combine with dry very carefully and stir well.
  4. Spoon about a third or half of the batter onto the pan to form a thin crepe.
  5. Flip carefully after 20 seconds or when the crepe starts to bubble and turn golden-brown on one side.
  6. Repeat with remaining batter and fill the crepes with anything you desire!

What exactly is this victory, might you ask? Well, Australia’s done it again! Lorna Jane wrote an article about how Australia shifted their national food pyramid to a vegetable-based lifestyle! Woot woot!

It’s SO important to fill up on water, fruits and vegetables and it’s amazing that Nutrition Australia thinks so too. I know that there are a lot of vegan and raw till 4 Australian gurus out there who follow a somewhat different food pyramid, but not everyone can abstain from meat and dairy. What every should do is to eradicate a sedentary lifestyle fueled from processed carbohydrates, bad sugars and chemicals! Hopefully, more and more countries will adapt to promoting a more active lifestyle filled with an abundance of produce and wholesome foods.
