Remember my 1-ingredient cookie dough recipe? I think it just got topped. WHUUUUUUUUUT. Like my cookie dough these sweet treats are easy, no bake, and only requires one ingredient!! No eggs, no gluten, no dairy, no oil, no buttah. Just a sweet potato!
I bought the most adorable Japanese sweet potatoes, including this apple-shaped baby above! Right when I got home I knew they HAD to be played with. I almost made wedges, but baking it would take at least twenty minutes and I was haaaaaaaaangry. 😡 So I decided to challenge myself by creating quick and healthy microwave treats that are high in fiber, potassium, and low in saturated fat. Look our for more one-ingredient, single-serving recipes with my favorite carb!
The skin peeled off so easily like a banana’s. I took this hot little cutie (while eating the skin, of course!) and found it looked and felt just like bread dough. After reforming it a little I got it to look like a cake! Eh, a bit on the messy side, so I covered it with some sea salt caramel Elli Quark, cinnamon, crushed almonds and a pinch of chia powder. And I had no effing regrets. I was so pleased with the results that I had it for dessert on the same day! It fails in terms of photo swoon-worthiness, but it tastes like a dream.
My past concoctions were sweet cinnamon bun, fruity almond butter and chocolate peanut butter-raspberry dreams. I wouldn’t ever want to wake up 😛
Cake in less than 10 minutes. Vegan. Gluten free. Paleo. Low in fat. High in fiber. All for youz.
RECIPE (cake)
- 1 sweet potato (can be any size but the biggah the bettah)
- Healthy frosting makes the cake taste WAY better but it’s really optional: Greek yogurt, Elli Quark, vegan whipped cream, protein whip and other toppings such as fruit, cinnamon, and high protein/fat delicacies such as nut butter, almonds, chia seeds, flax, coconut, cacao powder, carob chips, etc.
PROCEDURE
- Cook the sweet potato until soft and skin falls off. The way you want to cook it is up to you.***I know a lot of people out there have something against microwaves but I never vouched real evidence of that, so I microwaved mine for 8ish minutes, more or less depending on size. Baking, boiling and steaming usually take longer.
- Let cool for a few minutes (At this time I thought of what to do with it, and bam–cake!).
- Carefully peel the skin and place the potato in a bowl or a plate.
- Form the potato into a cake-like shape and texture. Use a fork to mash the potato slightly. If the potato is too stiff, add a few drops of water to soften it.
- Top it with whatever you like, ideas listed above!
I can tell you that this is probably the most UN-CREATIVE recipe I’ve ever made, but it’s one of the most delicious. #bestaccidentever
