I used to be addicted to ice cream (and caramel popcorn….and honey roasted peanuts…aaaaaaand cookie dough. I’ll just admit I was a pretty disgusting eater as a kid, okay?). Little did I know that three years later there would be healthier alternatives to my favorite treats! Normally the problems I found with other supposedly healthy alternatives were chunky, icy textures, high amounts of natural sugar or unknown ingredients. Some even had a pungent gasoline-like aftertaste, worse than eating genetically modified grapes. DISGUSTING.
On the other hand, Enlightened Ice Cream‘s products are practically the entire package: low in calories, sugars, and lots of protein and dietary fiber all coming from pronounceable and minimal ingredients! The first time I tried Enlightened was at the IDEA World Fitness Convention in 2014. Their coffee flavor was AH-mazing. I reposted them on Instagram right away!
A month later, I found them at Sprouts except in peanut butter flavor. I totally gave in–after all, how could I deny my love for peanut butter? It was absolutely worth the risk after thawing the ice cream for a couple minutes. Do NOT skip this step, otherwise it will probably taste like ice. I’m sure you can microwave it for at least 30 seconds if you’re in a rush or too impatient to gobble this deliciousness 😉
For one bar you get 80 calories, 2.5 grams of fat (one saturated), 15 grams of carbohydrates, 5 grams of fiber, 3 grams of sugar, 6 grams of erythritol and 9 grams of protein! If you want to see the micros and ingredients they can be seen below:
Ingredients: skim milk, milk protein isolate, erythritol (natural sweetener), non-GMO soluble corn fiber, cream, peanuts, locust bean gum, guar gum, sea salt, natural flavor, monk fruit extract.
OMG! There’s no raw eggs or heavy cream!
I was pretty worried when I found out there was skim milk in this product but I found it pretty tolerable. The bar itself is delicious and decadent just like peanut butter with a hint of sweetness! It’s a perfect substitute for those PMS cravings or a late-night snack.
As for nutritional info I am pretty picky with nutrition and additives. Enlightened is lacking in suspicious ingredients and is high in my two favorites macros: protein and fiber! I was very impressed with the coffee flavor at IDEA, and was not disappointed with their peanut butter bar too!
Sorry vegans and paleos, you’ll have to stick with frozen bananas (which are still super delicious)! There are little to no cons about the taste except that some people wouldn’t compare it to regular ice cream, especially texture-wise. My dad, the biggest Haagen Daaz fanatic, sadly didn’t 😦
Enlightened Ice Cream is totally guilt-free if you can have dairy products because it’s made of all-natural ingredients AND delivers awesome micros! They’re divine with almond butter, cinnamon, chocolate chips, Greek yogurt, fruit and coconut, but it’s a bit of a given that these bars are hard to break down and make into a sundae. I swear, I did not miss my old Ben and Jerry’s ice cream at all after discovering these. You can find their products on their website and don’t forget to check out their social media too!
