Ah, fifth grade: toaster waffles every morning. Homestyle, buttermilk or chocolate chip if I was ever feeling luxurious. Always drenched in maple syrup; oh yeah, and fruit to make it “healthy”.
Let’s take a moment of silence to watch this commercial.
Remind you of childhood, too? It’s weird how our greatest nightmares seem so innocent at first but something as basic as an Eggo waffle can be so traumatizing. It was for me at least.
RECIPE
- 2 eggs
- 1 tsp coconut flour
- 1/4 tsp baking powder
- Pinch of salt
- For sweet: cinnamon and Stevia
- For savory: pepper and garlic
PROCEDURE
- Mix all ingredients together.
- Cook on a waffle iron.
- Top with your favorites! For sweet I love almond/peanut butter, berries and chocolate and for savory I love spinach and Sriracha!
These waffles are pretty crispy depending on how long you cook them. I made them savory so they didn’t have that same sweetness but the texture and color were spot on! Make some on the go as a quick breakfast or a late night snack! Watch some cartoons while you’re at it 😀
