This would have been in the actual Thanksgiving feast if it didn’t disappear so quickly. As I mentioned before, I wanted to bake for dinner in honor of this all-American holiday. After some thought, I decided to make it for a delicious morning breakfast instead. Thanksgiving lasts for 24 hours. Why shove all the festivity into one meal and not show gratitude for the entire day? For those of you who didn’t watch my October Favorites video, one of my favorite recipes was the maple-cinnamon apple & pear baked oatmeal from Oh She Glows by Angela Giddon. I’ve adapted the measurements to marry my two favorite types of pie: apple and pecan (sorry you’re not part of this pumpkin. I don’t think you’d have chemistry with any of the two 😦 ). And the result had me at OH MY LAWD. ALL THE WASTED YEARS.
I always loved my ol’ chilled oats, but baking it makes it so much more cakey! And this recipe obviously isn’t confined to just the holidays. Make it for breakfast or a potluck dessert! And please check out Angela’s website! She has amazing recipes and blog posts suitable for healthy vegans and those on a plant-based diet! But even if you’re not vegan, there are so many awesome recipes that you’re bound to enjoy at least one of them.
RECIPE
- 2 cups gluten-free rolled oats
- 2 TBSP coconut or brown sugar
- 2 cups chopped apple
- 1 1/2 TBSP cinnamon
- 1/2 cup pecans
- 1 tsp allspice
- 2 1/4 cups almond/coconut milk
- 1/4 cup maple syrup or honey
- 1/2 tsp cloves
- 2 tsp vanilla extract
- 1 tsp baking powder
- 1/2 tsp sea salt
- Opt: flax seed, applesauce, walnuts, almonds, etc.
PROCEDURE
- Preheat the oven to 350F.
- Mix dry ingredients well (add in optional dry ingredients like the nuts or seeds, or save them for topping later).
- Combine wet ingredients in a separate bowl, minus the apples.
- Stir in wet ingredients with the dry ingredients until you have a liquidy mixture. Carefully fold in the chopped fruit and pecans.
- Spray a large baking dish, pie pan or even bundt cake pan. Pour in the mixture and carefully smooth out on top. Sprinkle optional nuts, seeds or other ingredients on top and press gently. I added more pecans.
- Bake for 40 minutes or more. Let cool and serve (makes 6 large squares).
Look out for more Thanksgiving recipes, since there were so many spectacular dishes I’ve tried this year! They’re all homemade and made completely out of whole foods! If a dish is homemade, you know the person who made it wants to show gratitude. So eat it!
